Our mission is to showcase Australian sustainably sourced seafood, prepare it expertly and serve it simply.We work closely with fisherman around Australia to source only the best seafood. All of our fish is purchased whole and processed in our custom designed Fish Butchery just down the road from the restaurant. Some species of fish are dry aged in our custom designed cool rooms, allowing us to intensify and clarify the flavour of certain species as well as achieve maximum skin crispness.Our sustainable approach and appreciation of Australian fish is displayed by our use of the whole fish, including offal where appropriate.Our attention to detail in all things fish, flows down into everything we do; from our vegetable preparations, our exquisite desserts, and our wine list.

    Estuve en Un restorán en Melbourne y ellos insistieron en que tenía que ir a cenar a un lugar en Sidney, donde el protagonista es el pescado , y su cocinero lo puso en lo más alto de la técnica y trabajó se está reconociendo a nivel global - Sin dudar , salí para allá y tomé una reserva, sus hablar nada de inglés , un joven que vivió un tiempo en Perú , pudo explicarme detalles de la experiencia, donde él puso mucha pasión , recurriendo al traductor cuando las palabras faltaban, toda la experiencia fue maravillosa, me quedé con muchísimas preguntas , Pero eso es una cosa que tenemos los cocineros , me traje el libro , que por momentos dude en cargar esos kg hasta Ushuaia FindelMundo, Argentina, tengo tema de lectura y traductor - y otro camino para investigar . Muchas gracias 🦀🦀🦀
