Es por eso que siendo ellos los nuevos propietarios de Simeon's, junto con Jamie (chef de repostería, quien es pareja de Dean) se comprometen a crear platillos y postres de la más alta calidad y brindar siempre un excelente servicio. El objetivo de los propietarios es convertir a Simeon's en el restaurante elección tanto para visitantes como para residentes de Ithaca. El edificio histórico en el que se encuentra posiblemente le invite por sí solo a pasar a conocer el restaurante, y una vez que pruebe los distintivos platillos y su nivel de servicio seguramente se animará a regresar.
