Seine Küche verbindet französische Kochtradition mit saisonalen Produkten und internationalen Einflüssen. Unter dem Leitgedanken „Alpine Plant Cuisine“ entstand unter seiner Leitung ein neues Abendkonzept mit vegetarischen und veganen Menüs. Im Mittelpunkt stehen saisonale Zutaten und eine moderne Interpretation pflanzlicher Küche. Ein Beispiel ist geschmorter Lauch mit Vinaigrette.
