Sous une superbe coupole de verre, La Bauhinia propose une carte de la mer conçue pour être partagée. Ici, le poisson est roi. Il s’y décline en cru, en cuit, s’inspire des racines bretonnes du Chef Quentin Testart et se pimente de ses voyages à travers le monde. A 28 ans, Quentin Testart devient le plus jeune Chef Exécutif des Palaces parisiens. Désireux de sortir des codes classiques de la gastronomie de Palace pour insuffler une cuisine identitaire, résolument tournée vers la mer et les parfums. L’offre sucrée est quant à elle signée du Chef Pâtissier Maxence Barbot, on peut la savourer en dessert, ou lors des rendez-vous privilégiés du week-end : le tea time des samedis et dimanches, ou l’iconique brunch de la mer le dimanche.

From Canton to Sichuan, passing through Yangzhou, chef Samuel Lee presents the flagship dishes of the (very vast) Chinese gastronomy in the respect of seasonality, without a show of strength but with finesse and delicacy. In the spectacular hall of this palace, an elevator takes you to a cosy room. No window here but a subdued light, a soft carpet, an imperial decoration and wood for a refined and calm atmosphere, allowing to taste his duck lacquered sheltered from prying eyes. All dishes intoxicate and leave unforgettable memories. It is no coincidence that the Shang Palace is the only Chinese starred restaurant in France!
