The menu features true Tuscan cuisine, with many of the ingredients being imported especially from the Villa and surrounding farms. The care which goes into the menu is matched only by the attention to detail with which this landmark has been transformed into an elegant yet comfortable place to relax and enjoy good food, great wine and excellent company. Our inspiration is the Zeus Faber, one of many local fish that can be fished sustainably and from our shores; although it has a wonderful Latin come Greek name, it also has a very British name - John Dory. Faber is the Latin word for ‘Smith’ and as Smith is the most common name in English, we decided it sits well with our ethos - we want to be accessible to all.Setting us apart from the rest is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. 'The Crabtree, with its spectacular position downstream from The River Cafe,has a huge sprawling garden, a glazed colonnade and frontage on to theThames shaded by a weeping willow. The prawns in chilli hot oil and the toastspread with tomatoes and onions were good, so much so we ordered themagain when we returned for Sunday lunch. Sunday roasts with 'all thetrimming's' - we tried beef and pork - had everything a Sunday roast shouldhave. Somewhere rather spiffing to go' (Fay Machsler, Evening Standard)
