At Carbon Mexican Woodfire, we celebrate the spirit of fire, flavour and community.
Our kitchen uses traditional parrilla techniques to bring wood-fired energy to Mexican classics, charcoal-sealing meats, seafood and tortillas to create dishes that carry bold, smoky depth.

Our menu encourages sharing — from “Para Compartir” starters like fresh oysters and guacamole, to tacos filled with barbacoa ribs or wagyu steak, and our wood-fired steaks including MB2+ rump and MB3+ sirloin.
We pair every dish with a drinks list full of margaritas, mezcal, tequila cocktails, local wines and craft beers.

We designed the space to feel warm and vibrant: low lighting, rustic finishes and the scent of mesquite in the air. From intimate dinners to lively gatherings, Carbon is about sharing food, drink and connection in a spirited, wood-smoke ambience.

Food was incredible, served in a very thoughtful was so it could be enjoyed not all brought out at once. Quite loud, hard to have a conversation. Will definitely go again.

Good afternoon, I hope you’re well. I wouldn’t normally send a message like this, however I felt it was important to share feedback following our visit to Carbon last night. My friends and I had booked with yourselves for what was meant to be a special leaving meal, and as we had heard such brilliant things about the restaurant, we were all really looking forward to the experience. The only reservation available when booking was 8:30pm, which we were more than happy to take. Unfortunately, upon arrival we were immediately told that the kitchen would be closing in eight minutes, meaning we felt rushed into ordering both food and drinks before we had really settled in or had the chance to properly enjoy the occasion. While we completely appreciate kitchens have closing times, it did leave us feeling as though our booking was an inconvenience despite being an available reservation slot. In addition, our table was positioned at the very back of the restaurant which made it quite difficult to get the attention of staff throughout the evening. Although the service itself was polite and friendly, the overall ambience unfortunately did not match the experience we had expected. The music repeatedly cut in and out during the meal, the room itself was noticeably cold, and overall the atmosphere felt quite uncomfortable and rushed. We fully understand that availability and busy evenings are ultimately a reflection of how popular and successful your restaurant is, however we left feeling disappointed as the experience did not reflect the standard we had heard so highly praised by others. As this was meant to be a special occasion for our group, I wanted to raise this with you directly as we do not feel we received the experience we had booked and paid for. We would really appreciate if you could look into this and consider an appropriate gesture of goodwill. Kind regards
