We wanted to take an innovative approach to our restaurant and create an experience you can’t get anywhere else -- and Absinthe Brasserie was born. The restaurant is Cecy Graf’s brainchild, combining absinthe and Cajun food in Seattle’s popular Belltown district. Our absinthe options are extensive. You can order flights or full servings. We’ve also worked to make sure our restaurant offers a comfortable, inviting environment for women. It’s the perfect place to bring your date or your friends.

    My husband and I were on a date night and this was our first time here. The staff was friendly and greeted us upon our entrance. We had never had absinthe and so our server, Shannon, gave us a quick tutorial. Based on her recommendation we went with the Nouvelle Orleans. We ordered the fried catfish and shrimp and grits. The portions were generous and the taste... wow! You definitely can't be on a diet but it's well worth the calories. The use of the antique absinthe fountain to prepare our absinthe drink just added to the experience. We'll definitely be back and will recommend to our family amd friends.

    We were disappointed - all the way around. The place is called Absinthe after all, and they have a long list of absinthes to offer, including three flights. Unless that is, of course, you want to actually order one. The could not actually pour any of the listed flights - because they were out of one or more of the varieties. OK - so how about absinthe cocktails, they have a nice list. But they could not make my first several choices - out of stock again. So I finally settled for one that the waitress/bartender could recommend - of those few they actually had. It was good - served in a unique individual absinthe drinking glass. "But be careful, don't break the glass straw, it's the last one and I'll have to charge you a lot for it" she said. She was apologetic about their lack of stock - but it seemed excessive for a place with an absinthe themed name and menu. Looked like I may have been the only one in there to actually order it. Too bad! On to the food. We ordered the Red Beans and Rice with a side of Andouille. The beans were over cooked and could have come straight out of can - not at all the flavor of the Cajun treat we were expecting. The andouille was a few slices of over grilled sausage, maybe it was a mild andouille - hard to tell. We also ordered the Crawfish Pasta. There were tiny crawfish and bits of the same andouille, but the cream sauce was more like cheese wiz. There was at least a bit of spice and the flavor was pretty good. I was a much heavier dish than we expected from the description. There were several other things on the menu which sounded good - but we are not likely to return. We really like cajun/creole food, and I love absinthe! We'll keep searching for them.

    I love the menus and the variety of cajun, creole, and southern food. We had the brunch on Sunday and definitely will come back for dinner and happy hour! Didn't try absinthe yet, so that is for a future visit as well! Our server was prompt and gracious, the food came quickly and was delicious!

    We had a fabulous brunch for a group of 7 on a Sunday morning. The food was really delicious and several of the group had Bloody Marys, which they proclaimed to be "the best BM they'd ever had!" Even came with a pickled string bean for stirring! I had a wonderful veggie eggs benedict and the potatoes that came with the eggs were really tasty! Along with a huge pot of French pressed coffee, this was a really delicious meal for each of us. And the friendly and attentive service made us confident that this restaurant is serious about their customers. Highly recommended!

    The drinks were great. Our server was amazing in that she had to take care of an annoying table of tech-holes with seperate checks and her other server was more interested in drinking with patrons than serving the collective. I'd go back I just would hope that both servers are gonna actually work...
