Our Carte Blanche Experience is a five-course tasting menu Chef Sai — an ever-evolving series of creative, seasonal dishes that showcase the ingredients we’re most excited about and the stories we most want to tell. It’s the best of what’s coming out of the kitchen that day, thoughtfully composed to reflect the moment, the season, and the soul of Wildling. Add on our curated wine pairing option for the full Wildling experience. Please note that Carte Blanche is by reservation only. We can accommodate for pescatarian and vegetarian diets. Given the nature of the menu, some diets and allergies can not be accommodated. For all other dietary needs, please contact us at (250) 980-6919 before booking. In the event that a Carte Blanche reservation is changed or cancelled within the 24 hours, we will charge a $50 cancellation fee per guest. Nothing personal - we prepare for each and every guest days in advance.

Food is good but extremely overpriced. $30 for two tiny thin slices of tuna. Portions on some dishes were tiny with a big price tag. Service was not good. The service was very Inhospitable. FYI If you reserve a table and do not cancel 24 hours ahead then they say that they will charge you $35 a person on the reservation.

Food is pretty spectacular. The beef tartar and tuna are wow. It was my second time there and I didn’t order the pork belly and was disappointed as. I remember it being fabulous. The sablefish was perfectly done and delicious. We ordered two dishes each to share and frankly it was plenty of food. The bill was $500 with tip for three people including two glasses of wine each.

Good food and good service. Some personal preferences on a few dishes didn't work for myself but overall good experience. Steak cooked well, scallops cooked perfectly, salad dressing ratio can be more balanced.

This was my 2nd time enjoying Wildling cuisine - mid Sep and late Apr 2026. Both experiences were good with great service, though I enjoyed the food more in Apr.

Service was great, food was good but not exceptional, tables are way to close for comfort, the chairs and benches are uncomfortable. I would suggest a redo of the interior design, seating plan and definitely different chairs and benches
