Sushi by SYC offers an amazing omakase experience with two options priced either at $100/person or $150/person. We also offer a specially curated a la carte menu for those who wish to choose what they are craving. For our omakase experiences, we require a deposit of $25/person at time of booking, but the deposit will be applied as a credit to your final bill on the day of your visit. A la carte is only available for walk-in customers and a reservation is not available. We offer an intimate sushi bar setting where we will serve a multi course dinner specially curated by our chefs consisting of a variety of techniques and which will include ingredients that are raw , dry-aged, seared and cooked. Our ingredients will be paired with house-made sauces and toppings to accentuate the flavors of all ingredients and create an incredible experience. Our beautiful & lively ambiance, pristine service, extensive bar menu and unique dishes will create an unparalleled experience.

The Counter at Odell’s is a chef’s counter experience inspired by Chef Miles Odell’s transformative years as a chef and most formidably, Japan. Rooted in deep respect for Japanese culture, Odell captures the spirit of kaiseki––a coursed dining experience driven by seasonal proteins and produce––through a multi course chef’s counter experience.

Our menu changes nightly and consists of cooked dishes and nigiri sushi. We often serve items containing red meat, raw seafood, shellfish, gluten, tree nuts, and other common allergens. Please list all allergies and dietary restrictions in your reservation notes. We cannot accommodate vegetarian and vegan diets at this time.

Milpero represents the next chapter of Chef Johnny Curiel’s deeply personal memoir, and another step toward fulfilling his life’s work of showcasing the beauty of Mexico. He’s proud to express the depth of his heritage with an 18-course tasting menu that stays true to Mexican tradition with deep respect for masa nixtamalized in-house.

The experience starts in a dedicated antechamber with a welcome drink, and from there the evening unfolds as guests begin at the cold counter for raw specialties, move through the glass-enclosed wine and fermentation room, and conclude at the hot counter, where masa takes center stage.

We proudly partner with the Masa Seed Foundation to grow all of our corn just southeast of Boulder as part of a pioneering ancestral Mexican corn project. Each fall harvest reflects our commitment to preserving heirloom varieties and honoring the cultural legacy of Mexican corn.

Reservations for each month are released at 8am MT on the 1st of the preceding month.
