Since 2016, Bosq has uniquely celebrated the essence of the Aspen Valley landscape, creating a dining experience where the forest shapes the plate. Chef Barclay Dodge’s Michelin-starred menu blends backyard foraging and local farm ingredients with bold global flavors.

I have not been to Bosque in a long time and was very excited to be going. The ambience and service were absolutely lovely as usual. We ordered the three course restaurant week menu. Unfortunately the portions were laughably small. The steak entrée was so chewy as to be inedible, even after we were brought a second attempt. I hope the kitchen was having a freak bad night.

Barclay Dodge runs a remarkable restaurant. My wife and I had the Pumpkin Soup and the watermelon crudo with peppers as a first course, the steak (cooked to perfection medium rare) with mole sauce as the main, and a Golden Egg and butterscotch for dessert. The Pinot we shared was wonderful too. Fritz’s service was impeccable, the food wonderful and the timing great too. Barclays deserves all the accolades he receives for what he has built.

Our time at Bosque was more an exposure to a world of artistry and craft than simply fine dining. We went there to celebrate my birthday and our 35th anniversary. Simply an amazing time. Each course was an out-of-world experience. Fritz, our server, was both attentive and engaging. We simply had an incredible night and highly recommend this experience.
